As well as sleeping, I have also been doing alot of cooking (and eating of course). My favourite has been to make healthy Granola from the 'Deliciously Ella' cookbook. I have been eating it as a light breakfast or afternoon snack after an hour or two of revision. I really hope that you'll enjoy this recipe and that you'll be able to receive the same pleasure from eating it as I do. So lets get started;
Ingredients:
1 cup Quinoa
1 cup Pumpkin seeds
1 cup Sunflower seeds
1 cup Raisins
1 cup Flaked almonds
1/3 cup Sesame seeds
1/3 cup Linseed's
1/3 cup Flaxseed's
2 cups Oats
3 tablespoons Olive oil
3 tablespoons Maple syrup
3 teaspoons Ground cinnamon
Directions:
1. Preheat the oven to 200/C (degree's Celsius)
2. Add all the dry ingredients into a bowl (except the cinnamon and raisins) and mix (using your hands) until thoroughly combined.
4. Mix together until each grain is coated in the sweet liquid, spread it evenly out onto a greased oven tray and place in the oven.
6. Once cooled, pour into an airtight container and store in a cool/dry place.
*Note - Meal idea:
This is one way that you can incorporate this delicious granola into a meal fit for a king (or just a food obsessed girl like myself). As I'm not sure where to get Acai from for the famous Acai smoothie bowl, i decided to instead substitute the Acai for 1/2 punnet Raspberries and 1/2 a mango. Using a 'Blend Active' smoothie maker (or just normal food processor), whiz the fruit up until smooth and milky. Pour this into a bowl and using the Granola you made earlier, sprinkle this on the top and eat up!
